Vice86 Posted October 11, 2021 Posted October 11, 2021 Fat separator InShot_20211011_175249698.mp4 As @Xiahou Dun requested, the post of the roast (crusted ham-roast) First slice some tiny corners into the fat layer of the ham, than roast it evenly hazelnutbrown from each sides except the fatcap in butter or butterlard, (Oil doesnt give such a good colour and flavour) While roasting, cut some root vegetebales like onion, carrots, celeryroot, parsnip, leek, springonion, garlic. after the meat is brown from each side, put it aside onto a plate and start roasting the vegetables until they get some colour. Then put some tomato-paste in it to give it that extra colour and flavour. Wait until the tomato-paste turns brown, then throw in some Stock or wine (i used stock bc of the kids) to release the branded tomato-paste and fill it until around 3/4 of the height of the ham. Place in the ham and put it all together without a cover into the oven at 180 C°. i used the air grill, which alternatively combines the overheat grill and the circulation hot air. Otherwise i would use 200 top and bottomheat. I Roasted it for around 1,5h (1,5KG) until the meat had a core Temperature of 80C° After it is done, put the meat out on a serving plate and prepare the sauce. Filter the sauce and divide the fat from it. Thicken the remaining sauce with some sauce thickener and taste it up with Salt and pepper. I have served it with dumblings and red cabbage.
