1) Where possible try to use the language of the topic with a translation underneath. This will help with getting the learners used to reading the language they're trying to learn.

Plural, yes it does matter when you want to distinguish one from some or many.

Correct.

The conjunction "and" always is written "y" in spanish. ALWAYS.

Personal pronous "yo" is written "i"

About singular and plural, the general rule is add the letter "S", "AS" or "ES"  to a word to change it from singular to plural.

Sometimes in spanish you can recognize a word from plural or singular just for the "S", by example:

 

Fotos = Photos

Foto = Photo

 

The 's' makes it plural, but not all the time this rule apply, example:

 

Soles from Sol = Suns / Sun

Árboles from Árbol = Trees / Tree

 

You can see that the spanish words end with a consonant needs an 'es', I hope this can help you.
