Ol Smoke Posted November 12, 2013 Posted November 12, 2013 First buy fresh coconut and shred it. Then toast it until a very light brown. Then put it in a plastic bag and add 1/2 tsp of fresh Vanilla oil Mix it up real good and let it stand for about 30 minutes. This is best with a dark Jamaican Rum. Put 1 ounce of Rum in a medium glass without ice put in 1 tsp of the coconut mix put in 1 ounce of cream or half n half stir add 1 ounce of fresh coconut juice add crushed ice do not stir top with a small amount of fresh Orange juice place straw into middle of glass and taste the Joy of Toasted Coconut Rum Quote

NoOne Posted November 13, 2013 Posted November 13, 2013 Too bad you could not order this up at a bar. Don't know of any that keep fresh coconut and a toaster oven handy. Quote
Ol Smoke Posted November 13, 2013 Author Posted November 13, 2013 I got the idea for this when I tasted a homemade Almond Joy that my daughter in law makes. Quote
Cicione Posted November 13, 2013 Posted November 13, 2013 As a rum lover that imbibes on rare occassions nowadays...this sounds wonderful! If you like rum, here are a few of my favs. Ron Zacapa - Guatamalan Dark Rum - wonderful on ice...nothing else needed! El Barajito - Dark Puerto Rican Rum....simply delicious on it's own or with mixers. Don Q - Grand Anejo - a bit strong and has a kick! MMMMM...good! Quote
vyder Posted December 15, 2013 Posted December 15, 2013 Good lord I finally found this recipe! That sounds pretty interesting. I am not a fan of dark rum (or rather it doesnt like me lol). I usually have coconut rum with pineapple juice. I gonna have to see if someone can make this for me or I will get the ingredients and try it out when the family is home for christmas! Thanks smoke! 1 Quote
