 As a still growing 17 year old, I eat soooo much food. Whenever I meet a friend of my parents that I haven't met before, I often hear, "Oh, so you're the one that eats so much." Because of this, I have become quite an artist with food. But I don't make food from scratch, oh no! I create masterpieces with leftovers!

 

Below is what I just made this evening, I have no name for it, as I eat too quickly to gain any sort of emotional attachment :P

 

Ingredients:

Large Tortilla Shells

Barbecue Sauce (I prefer Bull's Eye because of the nice, bold flavor)

Onions

Mushrooms

Any sort of leftover meat in your fridge. I used chopped up chicken thighs for this one but have done sausage, steak and pork before

Cheese (I use both Old Cheddar and Mozarella, but you can use whatever you like)

 

Instructions:

Preheat oven to 400 

Put the Tortilla Shells on a non-stick pan

Spread your Barbecue Sauce on them

Sprinkle on your meat, onions, mushrooms as well as whatever else you have around and would like to put on

Cover it with cheese

Put it in the oven for 12-18 minutes depending on preference of cheese browning and firmness of tortilla base. Start checking regularly after 8 minutes.

I am also known to combine leftover taco beef and four cheese Alfredo sauce, the result is delicious!

I remember being 17 and hungry all the time. But wait 12-18 minutes, plus however long it took to make it to eat some food? That's crazy for a 17 year old. :P

 

But yeah, this sounds pretty good and I have done similar things for lunches. You could also try making a salad with greens, rice, tortilla chips, whatever left over meat you have, maybe some black beans, and then put salsa on top and sour cream if you like it.
