ITALIAN PIZZA RECIPE

(pizza Margherita)

 

 

ingredients

 

1 kg flour 00

500 cl water

2 gr yeast

2 teaspoon of salt

500 gr mozzarella

fresh tomato sauce

olive oil

fresh basil leaves

 

 

making

 

In a receptacle dissolve the yeast in the water, then add salt and flour.

Kneading for a few minutes, the dough should not be sticky.

Put the dough in a covered container for two hours, after divide the dough into 4 or 6 balls (every ball is a pizza)

Let rise for about 8 hours each ball.

With the aid of a little flour roll and press each ball with your hands to create the shape of the pizza.

Add a few tablespoons of tomato sauce, the mozzarella into small pieces, olive oil and fresh basil leaves.

Put in oven,preheated, at about 220 degrees Celsius for about 10 minutes.

What kind of yeast do you use, that you should weight 8 hours? I sometimes make pizza too, but 8 hours is way too long to wait, although it sounds interesting :)

 

I (Dutch :P) usually use 7g of dry yeast (not needed to dissolve it) with 300g flour and 150g water. Bit of salt and a tablespoon oliveoil, hit all in the Kitchenaid (not all water at once) and mix it. Free-pro-tip; pre-heat the oven at 50 degrees (or less if possible), once it got there turn it off and then place the dough in it for only 45-60min is enough :) A lot better for last minute pizza and good for 2 pizza's (or 1, first time I made it I didn't understood the recipe that well :P) of about 30cm diameter.

 

 

Also, for others who make pizza, you can throw pretty much anything on it as long as it's not wet (like pineapple). Also, if your crust is too wet, dry your tomatosauce or leaking it out with a stainer (may take some time).

using 2 grams of a brewer's yeast cube, the leavening must be very slow

This recipe is recommended for five or six people, but depending on their size :)
