Dude, Minecraft as a game has changed so much since it was released. It went from a simple block game to a multi billion dollar industry with its own convention, and more mods then you can shake a stick at. But I think the biggest thing that changed the game the most was definitely when they incorporated the hunger bar. It completely changed the way people played, and it completely changed combat. It also nerfed survival quite a bit because before hand, you didn't regain hearts unless you ate but now as long as your hunger bar isn't low you regain health constantly.
