just as an update on different kind of sweeteners in ginger root beer:

 

white sugar keeps the taste crispy but adds basically nothing to it

cane sugar made it a bit rounder and kept it a bit sweeter compared to the white sugar

and honey gave a very floral but dry note to it

 

...

more experiments will follow now with adding juice
