DESCRIPTION OF THE SOMMELIER

Timorasso Derthona produced by La Colombera responds to the efforts made in recent years by some of the most important winemakers of DOC Colli Tortonesi to rediscover the joys of this native vine, which for a long time has populated this area with a strong wine vocation .

Since 2000, after a substantial corporate restructuring, La Colombera has decided to focus on Timorasso, self-imposing strict rules in the vineyard and in the cellar, in order to obtain labels of the highest quality, respecting the natural balance: the grapes of each vineyard they are vinified separately, while all the wines produced represent exclusively and exclusively vineyards, with a minimum age of twenty-five, in order to obtain fruits with a great aromatic complexity.

Obtained through a slow fermentation and a subsequent refinement on the noble lees, Timorasso Derthona produced by La Colombera shows in the first years of life a complex aromatic bouquet, which indulges in fruity and floral tones, while the strong structure supports its good alcohol content. But it is in aging that Timorasso manifests all its mineral power and the typical notes of hydrocarbon that characterize the vine.

The owner Elisa Semino suggests to the numerous visitors of the company to forget, without fear, a few bottles in the cellar and to taste it after a few years: a good opportunity to discover the great evolutionary path that makes this great Piedmontese white!

Villa Cornaro Pinot Grigio of the Veneto IGT

WINE

The vinification of Pinot Grigio begins with a soft pressing of the grapes and with an immediate cooling of the pressed grapes. The fermentation is carried out at controlled temperature with the help of selected yeasts varietal and follows a skin maceration of a few hours at 10 ° C. After fermentation, the wine must be kept in steel at rest on its own yeasts, until its use. Before bottling it is advisable to carry out clarifications and well-targeted filtrations, in order to obtain a more pleasant and harmonious product.

ORGANOLEPTIC CHARACTERISTICS

Noble wine obtained from the best grapes of Pinot Grigio from the sunny vineyards cultivated on the gravely soils of eastern Veneto. The particularity of the soil combined with the extraordinary mastery of our master winemakers give life to this magnificent Pinot that offers delicate sensations of exotic fruit to the nose, and a fresh and well-balanced taste with harmonious fruity notes on the palate. Finely mineral, it has medium body and excellent aromatic persistence.

GASTRONOMIC COMBINATIONS

It enhances its characteristics when it accompanies seafood and grilled fish in general. Excellent also with white meats and steamed vegetables.
