Why Is Flight Path Of Space Shuttle Shown as Wave On Map?

I've always wondered why the flight path of NASA's space shuttle was shown as a wave

 

On a 2 dimentional global map.  How can the Orbit Ground Tracks possibly go up and down like that?

 

Passing over Panama...Then England...then Australia...
